user meta fields not showing up for sync

I am not seeing any of the custom user meta fields I have set up. When I click add field and use the dropdown box to select/sync the field with an existing usermeta, they simply don’t appear. Any suggestions or ideas on what could be going on?

Also, is there a way to turn off the whole “Request Verification” thing? I don’t even really understand the purpose of having that manual verification on by default.
