The variables in {CURLY BRACKETS} are used to present data and info in email. You can use them to customize your email template.
{USERPRO_ADMIN_EMAIL} Displays the admin email that users can contact you at. You can configure it under Mail settings.
{USERPRO_BLOGNAME} Displays blog name
{USERPRO_LOGIN_URL} Displays the UserPro login page
{USERPRO_USERNAME} Displays the Username of user
{USERPRO_EMAIL} Displays the E-mail address of user
{USERPRO_PROFILE_LINK} Displays the User Profile address
{USERPRO_PROFILE_FIELDS} Outputs all profile fields in the e-mail
{USERPRO_VALIDATE_URL} The account validation URL that user receives after signing up (If you enable e-mail validation feature)
{USERPRO_PENDING_REQUESTS_URL} Gives a link to the admin to manage his pending user requests and registrations.
{USERPRO_ACCEPT_VERIFY_INVITE} This is an automatic generated URL that user will click to become verified after an invitation to get verified is sent to him.

Are we only restricted to the above fields?

Can we include their first name, last name and etc?

No you can’t restrict a specific role to login. However you can set registration to be “moderation” pending your own approval.

By the way, for the photo/file upload, when it is viewed using mobile, users are not able to upload anything.

As for the drop down list for registration field, it appears to be a blank space when viewed using mobile but it is clickable by the user. The function is working well, just the display when viewed in mobile.
